Best thing to do is use a revolver or repeater rifle and dead eye if you have to. Don't really worry bout the spoiler tags too much, if someone is foolish enough to look in the gameplay help section and not expect to see something about the game well then they have issues. Yeah this is one of the first pretty hard missions I ran across. What ended up working for me is every time a pack of guys showed up I stopped the carriage, went into dead eye mode and took them all out then went on my way. I haven't gotten to that mission yet; probably will tonite though. Either that or just stop your cart and kill them one by one. When you slam on the breaks they fly right in front of the wagon for easy access.
